The camera has the ability to update its time by contacting an external Internet NTP server, so, yes it might be possible to sneakiiy contact the manufacturer. Question 2 you will need some way of storing and viewing the video on your LAN. You might think of that as an app - but you don’t need to use the Amcrest one if you understand the protocols the camera uses. You can run such software on your PC or Mac rather than a phone.
